Pochero Recipe

As a tropical country that have a high temperature, it is  interesting how we, Filipinos, have such a deep love affair with soups and stews. There are many delicious range of soups such as tinola, nilaga and bulalo, chicken pochero and other piping hot dishes we favor even in warmer weather. The stew is originally from the legacy of 250 years of Spanish rule, this peasant’s stew is humble in its simplicity of preparation but hearty and satisfying with choice chicken, sweet saba bananas, potato chunks, chorizo pieces, legumes and fresh local produce. Try this pochero that is a classic tomato-based Filipino dish. It have lots of variations such as pork, chicken, or beef. In this recipe, we used chicken, pork and beef cooked with tomato sauce together with cardava bananas(saba), green beans, cabbage and other vegetables. Enjoy!


  • ½ kilo chicken , cut into parts
  • ½ kilo pork, cut into cubes
  • ½ kilo beef, cut into cubes
  • 4 pieces chorizo bilbao
  • 8 cups water
  • 1 tsp salt
  • 1 bundle onion leeks
  • 6 cloves garlic, minced
  • 2 tbsp oil
  • 5 pieces saba banana
  • 5 pieces boiled potatoes, quartered
  • 5 pieces boiled sweet potatoes, quartered
  • 1 cup chickpeas
  • 1 bundle cabbage, sliced
  • 1 pinch salt and pepper

How To Cook Pochero Recipe:

  1. Boil pork, chicken, beef, and chorizo in salted water with onion leeks.
  2. Let it simmer until all meat is tender then set meat aside.
  3.  Saute garlic, onion, then pour in the stock.
  4. Bring to a boil then add all meat, banana, potatoes, sweet potatoes, and chickpeas.
  5.  Season with salt and patis then add in cabbage.
